THE NORTH COTSWOLD BREWERY

The brewery came into Jon Piling’s hands in January 2005. It was started in 1999 by David Tilbrook, who brewed part time, but soon upgraded the plant from 2½ to 10 barrels.

Now in his early thirties, Jon took an early interest in real ale, joining CAMRA as soon as he was eighteen. He started out as a full-time qualified chef, but worked opposite the Phantom & Firkin in Loughborough. “I wanted to get out of catering and into full time brewing, so I introduced myself and started to help out unpaid,” says Jon. He got to know the people, plant and the recipes, so that his subsequent appointment as second brewer was a natural progression.

The inevitable hankering for a brewery of his own led Jon to sell his house in Devon to support the purchase of NCB.
